Francois wants his staff to excel in French cuisine and service and that means food safety is also a top priority. He understands that food hygiene standards are very important and wants his team to embrace food safety culture every day.
He realised that he needed a fresh pair of eyes to take a deep dive into their food safety procedures and processes. He wanted to identify areas for improvement and to make sure that they achieve a level 5 or Very Good Food Hygiene Rating on their next inspection.

An initial food safety audit for both food safety and allergens which can be compared to a health check or MOT of the business, was carried out at both restaurants.
Our food safety consultant met the teams and spent time with them in order to understand the business operations. Any areas of non compliance with photos taken; and recommendations for improvement were identified in a detailed report for each restaurant. This can be used as a comprehensive ‘to do’ list to make sure all the areas identified are addressed in a timely manner.
Our auditor shared our SFBB compatible Vacuum Packing Risk assessment and a monthly management audit template to help the business update their food safety management system.
Food Safety procedures and standards have now been tweaked and improvements made to ensure that both Josette and Paulette standards are something that both ‘mémères’ (French for grandmothers) would be proud of.
