Shaun Sookoo, is at the helm of this innovative food company who are a rapidly going from strength to strength providing a gold standard in catering services.

The Challenge

Food safety standards are a top priority for Food Division who want to comply with food safety legislation and good practice but also want to deliver a ‘gold’ standard of food in terms of safety and quality to their customers.

Sean Sookoo, the CEO and Bogdan Bieu, the Executive Chef run a tight ship, but after having grown the company so quickly with a significant increase in food production volumes and staff employed, wanted to identify areas where they could improve their processes and procedures. Thus leading to better efficiency and productivity, as well as improved food safety.

Food Safety Logic audits

The Benefits

Food safety audits will help to ensure that Food Division’s food products are safe to eat. By identifying potential hazards and risks such as cross contamination or poor temperature control, audits can identify issues that help to prevent foodborne illnesses or allergen incidents from happening.

Secondly, they will help to ensure that Food Division are complying with the relevant food safety laws and rules. This includes the structure of the walls, floors, ceilings, ventilation, drainage, waste management, traceability, food safety temperatures control as well as the safe handling of food. This will protect consumers and build and maintain their trust in the ‘Food Division’ brand protecting their reputation.

As part of our collaboration with Food Safety Logic, food safety audits have helped us to improved our food safety standards.
— Bogdan Bieu (Executive Chef)

The Solution

Regular food safety audits have been scheduled with Food Safety Logic auditors. Our auditors are trained EHOs and have food safety auditor and inspection qualifications and experience. The advantage they have from being a member of staff in Bogdan’s team is they can provide a fresh pair of eyes and a new perspective.

Food Safety auditors check all of the areas related to food production, including storage and packaging of food. They also carry out a full review of the food safety management system identifying any gaps in risk management or record keeping. Non compliances and recommendations are communicated at the time of the audit and sent in a detailed report which gives the business a ‘to do’ list to action and helps to keep them on track.

The Result

Food Safety Logic are delivering regular monthly audits for Food Division and supporting Shaun, Bogdan and their large kitchen team to reach the excellent ‘gold’ standard in food safety they want to achieve and deliver.

We have been working with Helen at Food Safety Logic for the last 6 months. Her guidance coupled with our receptive team has resulted in a top to bottom safety culture we are very proud of.
